Honeydew Popsicles

If you're wondering what I did with the other half of my honeydew after making Honeydew Spritzers, this is it. It's the same ingredients + honey. So if you love the combination of honeydew, cucumber, and lime, these will not disappoint. I just love the specks from the cucumber skins.

Fun fact about cucumbers, they contain vitamins B1, B2, and B6, which are known to elevate mood and support the reproduction of red blood cells. In addition to that cucumbers are 95% water, so they'll keep you hydrated and happy.

Raw honey has vitamins B1, B2, B3, B5, and B6, which means you'll get a double dose of vitamins from these popsicles. I just love learning things about the food I'm making.

These popsicles have a super high water content from the honeydew and cucumber. They have mild flavor and slight tang from the lime juice. The combination of cucumber and lime is one of my favorites for summertime. Added in with the sweetness of honeydew and raw honey and you're in for some pretty unique popsicles. 

Prep time: 15 minutes

Freeze time: 4 hours - overnight

Here's what you'll need:


  • Put all ingredients in the blender and mix until fully blended. I didn't strain my mixture because I love the specs of cucumber skin. Also, in a lot of vegetables the skin has the most nutrients. So, if it has edible skin, I eat it. 
  • Put your blended mixture into your popsicle molds and freeze until solid. It should only take about 4 hours.
